The Best Protection from Bird Flu is Building your Immunity
 
If the Bird Flu does become a problem, don’t count on the government to save you. Think of “Katrina and New Orleans ”. We saw how the Swine Flu scare in 1976 led to 300 deaths from the first “immunizations”. It never really did become a wide-spread disaster. The Bird Flu might also never rise to pandemic proportions. THE MEDICINAL USES OF SPICES
 
Cayenne Pepper
 
Uses – lowers cholesterol, reduces allergic responses, helps prevent atherosclerosis. It contains antioxidants, flavonoids, and carotenoids – all of which have anti-inflammatory effects and enhance circulation. Another component, capsaicin, can be used in a topical cream to treat pain from arthritis, shingles, bursitis, low-back pain, and neuropathy.
 
Doses – take one capsule of cayenne pepper up to three times a day or add 3 to 8 drops of the tincture to 4 ounces of water and drink two to four times a day. Apply a topical cream to painful areas according to directions on the label. Or you can season your food with cayenne pepper or hot sauce – I prefer the hot sauce.
 
Cautions – can cause gastric upset. Do not let the cream come in contact with eyes or mucous membranes. Do not use cayenne supplements if you are on blood thinners.
 
Cinnamon
 
Uses – lowers cholesterol and triglycerides; helps prevent heart disease and type 2 diabetes.
 
Doses – use 1 to 1 ½ teaspoons of the spice daily on your food. If you prefer the supplement, take 1,000 to 2,000 mg per day. As a tincture, use 20 to 40 drops to one ounce of water and drink three times daily.
 
Cautions – if you have diabetes you should monitor your blood sugar carefully and ask your doctor if your medication needs to be adjusted.
 
Ginger
 
Uses – reduces the pain and swelling caused by rheumatoid arthritis and osteoarthritis; helps prevent nausea and vomiting from motion sickness or pregnancy; enhances circulation and digestion; eases intestinal gas.
 
Doses – take one or two capsules with meals two to three times daily. As a tincture, add 10 to 30 drops to one ounce of water and drink three to four times daily. Or enjoy it as a tea – add ½ teaspoon of powdered ginger to eight ounces of boiling water. Cover and steep for 10 to 15 minutes. Drink four ounces up to three times daily.
 
Cautions – if you are taking a blood thinner, ginger might enhance the effect, so check with your doctor. If you take larger doses than described above, an upset stomach may result.
 
Turmeric
 
Uses – the anti-inflammatory effects are due to the presence of curcuminoids and the essential oils and carotenoids add to its beneficial effects. Helps to prevent Alzheimer’s disease, atherosclerosis, and some types of cancer. It reduces the pain and stiffness of rheumatoid arthritis and osteoarthritis. Turmeric also eases the symptoms of inflammatory bowel disease and irritable bowel syndrome.
 
Doses – take 250 to 500 mg of curcumin (standardized to 80% - 90%) three times a day or add 40 to 60 drops of the tincture to one ounce of water and drink three to four times a day. You can make a tea by mixing ½ teaspoon of powdered turmeric with 8 ounces of boiling water. Cover and steep for 10 to 15 minutes. Drink four ounces up to four times a day. Or you can do what I do – add curry to almost everything I eat.
 
Cautions – turmeric stimulates liver function so avoid it if you are prone to gallstones or any other bile-duct obstruction. If you are undergoing chemotherapy, consult your doctor before taking curcumin.

Garlicky Mashed potatoes with mushrooms
 
Ingredients for 4 Servings:
 
8 oz of FRESH mushrooms or 1 oz of DRIED Shiitake, Maitake, Oyster, or a combination
½ cup of water if using dried mushrooms
4 baking potatoes, peeled and cut into chunks
6 peeled whole garlic cloves
6 peeled and chopped garlic cloves
4 tbsp of olive oil
2 tbsp of brandy
½ cup light cream
salt and pepper to taste
3-5 tbsp of snipped fresh chives
 
If you are using FRESH mushrooms, chop them roughly.
If you are using DRIED mushrooms, reconstitute them by placing them in a saucepan with ½ cup of water, bringing to a boil, reducing heat and simmering 5 minutes. Allow to cool for at least 15 minutes. Remove the mushrooms and squeeze dry, saving the liquid. Roughly chop the mushrooms and set aside. Strain the mushroom liquid, bring to a boil and reduce to 2 tablespoons.
 
Meanwhile, cook the potatoes with the whole garlic cloves in enough lightly salted water to cover the potatoes. When the potatoes are tender, drain and mash the whole garlic cloves and potatoes together.
 
Heat the olive oil in a frying pan, and toss in the chopped garlic and mushrooms. Warm thoroughly, and then add the reduced mushroom liquid and the brandy. Cook down gently until evaporated.
 
Mix this into the mashed potatoes/garlic, along with the cream, salt and pepper, and chives. Taste and adjust salt and pepper in needed. Serve with a dollop of butter on top.
