ALZHEIMER’S and ALUMINUM – is there a connection?
 
By now you have all heard about the coming Alzheimer’s epidemic. Isn’t it strange that it’s only within the last 10 or 20 years that Alzheimer’s is becoming a widespread problem? Why didn’t it rear its ugly head 50 or 100 years ago?
 
There has been some evidence in the last 5 or 10 years that there is a link between Aluminum and Alzheimer’s. Of course the medical professionals have discounted it but allow me to present some facts. Let’s go back to ancient Rome . It was flourishing and prospering for many, many years. Then it started to decline. The rulers started acting “crazy”. There is evidence it was because of slow lead poisoning. The rich had their drinking water “piped” into their living quarters. The pipes were made of lead and the rich stored their wine in lead vessels. A slow absorption of lead could account for insanity.
 
Now let’s go to industrialized America . Beginning in the early 1940’s Aluminum entered kitchens everywhere across America. There were aluminum pots, pans, bowls and many other forms of Aluminum wear. Campers, Boy Scouts and soldiers used Aluminum mess kits. My mother and aunts cooked sauce in Aluminum pots and tomato sauces eats up Aluminum quickly. If you don’t believe me, the next time you cook Lasagna, cover it with Aluminum foil (not the “coated” kind) making sure the tomato sauce is in contact with the foil. Leave it overnight in the fridge and by the next day you will see where the tomato sauce ate holes right through the foil or else believe me - a long time connoisseur of home made Lasagna.
 
In addition, Aluminum compounds are used for “purifying” municipal drinking water. It’s used in food as alum, aluminosilicates (anti-caking agent) and dyes (aluminum lakes).
 
I believe the Aluminum of today is not unlike the lead of the Roman Empire and we all know what happened to it. I avoid it like the plague.

GARBANZOS (CHICKPEAS) – a very healthy, nutritious choice

Chickpeas might have been cultivated 11,000 years ago by the Mesopotamians because they believed chickpeas boosted performance under stress and enhanced ovulation. High in soluble and insoluble fiber, chickpeas are also rich in Manganese and Molybdenum – trace minerals needed by several energy-producing enzymes.
 
Australian researchers compared the diets of adults using chickpeas vs. wheat. They found that after six weeks, the chickpeas diet decreased the LDL cholesterol, blood sugar and insulin levels more than the wheat diet. Studies with mice suggest that chickpeas might help suppress the formation of precancerous lesions in the colon.
 
Canned garbanzos should be drained and rinsed to remove excess sodium. When buying dried chickpeas, make sure they are fresh, watch out for stones and pre-soak in water to shorten cooking time and reduce gassy tendencies.

½ cup drained, canned chickpeas contains:

5.9 grams of Protein – 12% of Daily Requirement
5.3 grams of Dietary Fiber – 21% of DR
0.6 milligrams of Vitamin B-6 – 28% of DR
80.4 micrograms of Folate – 20% of DR
0.2 milligrams of Copper – 10% of DR
0.7 milligrams of Manganese – 38% of DR
90 micrograms of Molybdenum – 200% of DR

What can be healthier than onions, garlic, curry, tomato and chickpeas?
 
CURRIED CHICK PEAS with GARLIC (vegetarian)

1 tbsp of Organic Coconut Oil (or Olive Oil)
1 medium Onion, finely chopped
6 cloves of Garlic, chopped or crushed
2 tbsp of Curry
1 cup of diced Tomato
2 15-oz or 16-oz cans of Chickpeas, drained and rinsed
1 tbsp of Lemon Juice (or Lime)
Salt to taste
 
Heat the Oil over medium heat in a non-stick pan.
Add Onion and Garlic and sauté until soft.
Lower heat and add the Curry and cook over low heat for about minute, stirring constantly.
Add Tomato and Chickpeas, stir until mixed.
Cover and simmer until Tomatoes are soft – about 5 minutes.
Stir in Lemon Juice and season with Salt to taste.
 
Makes 8 servings as a side dish or served in a pita.
